Stuck at home due to COVID-19 lockdown and craving for desserts? I tried these 3 simple recipes with easily available ingredients. The best part is that all of them are ‘sugar-free’.
- Banana walnut bread
- Banana oats pancake
- Banana walnut bread pudding (eggless)



1. Banana walnut bread
Preparation time: 10 min | Cooking time: 60 min | Total time: 70 min
Ingredients:
- 4 bananas (ripe/ over ripe)
- 2 eggs
- 1/2 cup unsalted butter/ghee
- 1+1/2 cup flour
- 1 teaspoon baking powder
- 2-3 teaspoon cocoa powder (optional)
- Walnuts (optional)
- Chocolate (optional)
Preparation:
- Pre-heat oven at 175-180 ËC for 10-15 min, while you prepare the batter
- Melt butter and cool (Do not use hot butter otherwise eggs can get cooked)
- Wet ingredients: In a bowl – mash bananas, add eggs, butter, and mix well
- Dry ingredients: In a separate bowl – mix flour, baking powder, and cocoa powder
- Mix everything together
- Add walnuts and chocolate (to make it extra special)
- Mix well
- Slightly grease the baking dish with butter
- Pour the mixture into the baking dish
- Bake at 175-180 ËC for 60 min
- Do the knife test – put a knife through the bread, it should come out clean
Tips:
- Do not mix hot butter with eggs
- Use ripe/over ripe bananas
- You can add vanilla essence, cinnamon, or other nuts
- Bananas: Makes the bread moist, soft & spongy and sweet
- Baking powder: Helps in fluffing
- You can use any baking dish if you don’t have a bread loaf pan (like me)
2. Banana oats pancake
Preparation time: 5 min | Cooking time: 15 min (4 pancakes) | Total time: 20 min
Ingredients:
- 2 bananas (ripe/ over ripe)
- 2 Eggs
- 1/2 cup quick oatmeal
- 1/2 teaspoon baking powder (optional)
Preparation:
- In a bowl – mash bananas
- Add eggs
- Add oats and baking powder
- Mix well
- Slightly grease the pan with oil
- Pour the mixture onto the pan with a ladle (big spoon) and cook & flip
- Top-up with bananas/strawberry (to make it extra special)
Tips:
- Use ripe/over ripe bananas
- Bananas: Makes the pancakes spongy and sweet
- Baking powder: Helps in fluffing
- Serve with maple syrup/ honey
3. Banana walnut bread pudding (eggless)
Preparation time: 10 min | Cooking time: 40 min| Total time: 50 min
Ingredients:
- 4-6 slices of bread
- 2-3 bananas (ripe/ over ripe)
- 1/2 cup milk
- 1/2 teaspoon baking powder
- 2 teaspoon cocoa powder (optional)
- Walnuts (optional)
- Chocolate (optional)
Preparation:
- Make bread crumbs
- Pre-heat bread crumbs in oven at 175-180 ËC for 10-15 min, while preparing the batter (to dry out the bread)
- Wet ingredients: In a bowl – mash bananas, add milk, and mix well
- Add baking powder and cocoa powder (optional)
- Mix everything together
- Add the pre-heated bread crumbs (do not crush)
- Add walnuts and chocolate (to make it extra special)
- Mix well
- Slightly grease the baking dish with butter
- Pour the mixture into the baking dish or pour as cookies or muffins
- Bake at 175-180 ËC for 40 min
- Do the knife test – put a knife through the mixture, it should come out clean
Tips:
- Use ripe/over ripe bananas
- Bananas: Makes the pudding spongy and sweet
- Milk: Helps in making the pudding soft & moist
- Baking powder: Helps in fluffing
- Add sugar/honey/cinnamon (optional)
- Serve with ice cream
