Tired of eating the same food everyday in lockdown? Want to try something new but don’t want to put a lot of effort? Try these stuffed baked capsicum. They are special and yet easy.
Added benefit: impress mom in 30 mins with this desi food recipe with a twist
Ingredients
- Capsicum/bell pepper (use all colors – green, yellow, red)
- Potatoes
- Cheese (preferred: cheddar)
- Eggs (skip if you are vegetarian)
- Olive oil, salt, pepper, other spices
- Optional:
- Sauce/salsa/ketchup/chutney
- Oregano for garnish


Preparation
- Pre-heat oven at 175-180°C for 15-20 mins while preparing the stuffing and capsicum shells
- Stuffing:
- Boiled & mashed potatoes – add salt, pepper, spices as per your taste
- Grated/ sliced cheese
- Whipped eggs
- Capsicum/bell pepper shells:
- Cut capsicum in 2 halves (vertically)
- Remove the seeds
Stuffing the capsicum/bell pepper
- Base of shell: add a drop of oilve oil, salsa sauce/ketchup, and cheese
- Stuff with mashed potatoes mixture
- Add more cheese and sauce
- Pour the whipped eggs
- Add more cheese




Baking the stuffed capsicum/bell pepper (oven/pan)
- Oven:
- Place all the stuffed capsicum on the pre-heated tray
- Bake at 175-180°C for 20-25 mins in oven
- Pan:
- Slightly grease a non-stick pan
- Place all the stuffed capsicum on the pan
- Simmer and close the lid for 25-30 min



Tips
- Garnish with oregano/olive oil
- Add peas with potatoes mixture
- Eat them as-is or serve with bread for a complete meal
- You can also make it without eggs
